Mexican chorizo is ground pork heavily seasoned with chile and garlic, stuffed into casings, and hung for several days to allow the flavors to mellow before using. Unlike Spanish chorizo, this sausage is never eaten without cooking.

One of the most authentic and unique moles is the Mole Negro, which is most often made using chocolate. In fact, this deliciously unique and traditional mole uses the rarest of all Mexican chiles, the Chilhuacle. It also contains cocoa, cinnamon, coriander, walnuts, raisins, cloves, as well as almonds, plantains, onions, and pumpkin seed.

By what other name is the avocado popularly known? If you guessed avocados are also known as alligator pears, you're right. This name refers to the avocado's pear like shape, green color and pebbly texture.

One of the main staples in Mexican cuisine is the avocado, which is most commonly used in guacamole. Avocados are native to Mexico, and Mexico is still the world's largest producer of this high-protein fruit. Come try our homemade guacamole which is made daily with fresh avocados!

In central Mexico, it is common for the tortilla chips used for chilaquiles to remain crisp. To achieve this, all ingredients except the salsa are placed on a plate, and the salsa is poured at the last moment, right before serving.
